The Assistant Brewing Manager, Yeast and Fermentation is responsible for Sanitation and CIP strategies at our Lehigh Brewery.

 

Ingredients to a Successful Assistant Brewing Manager

· Receives the in-spec wort from the brew house for pitching with in-spec yeast (the right culture, viability, micro health).

· Responsible for aeration of yeast and wort.

· Responsible to manage the complexity of multiple separate yeast strains in the overly manual Lehigh environment, making sure each in-spec wort is paired with the right culture.

· Responsible for development of complete understanding of the temperature, nutritional, oxygen and other needs of each strain to guarantee optimal performance; i.e managing all variables to deliver in-spec flavor profile on predictable weekly cycles.

· Responsible for optimizing our krausening program, which is THE  key driver of in-spec performance on SABL and other Lagers.

· Responsible for the Corporate propagation and yeast availability programs; i.e ensuring all BBC breweries have security of yeast supply and periodic yeast replacement. -- If project is approved for dedicated Yeast Prop, Storage, Krausen Supply vessels, Vertical Fermenters this individual would lead design of project and would manage all activity within this area.

· Position would be responsible for Sanitation and CIP strategies in the Brewery.

 

To be mixed with:

· BS in Brewing Science, Food Science and Technology, Chemistry, Microbiology, Biochemistry, or Chemical Engineering.  Brewing Diploma from Siebel or equivalent required.
