General Purpose:
The Catering Captain works with managers and oversees and directs assigned employees to ensure flawless executing of Catering events.
Position Description: Working with managers, oversees and directs assigned employees to ensure flawless execution of every event, big and small (Customer Service and Standards expert)Train all catering personnel to include:
-Teach Bar Course
-Teach Server Certification Course
-Teach standards for event set up (continental breakfast, lunch buffets etc.)
-On-going, On-the-job trainingCoordinate all components of an assigned event. On and off premise (ie: coordinate with manager, chef, cook, garde manger, drivers, banquet workers, casuals, bartenders etc.. on details of an event they are assigned to execute. Review timeline, packing list, menu, client information, room and/or buffet diagrams, etc.Works with management to coordinate staffing for eventsOversees room sets and event preparationsInventories liquor, wine, beer and soft drinks and makes recommendations regarding the maintenance of inventory levelsMaintains inventory of linen, china, flatware, glassware Maintains item identifiers, props, and equipment Coordinate all components of an assigned event. On and off premise (ie: coordinate with manager, chef, cook, garde manger, drivers, banquet workers, casuals, bartenders etc. on details of an event they are assigned to execute. Uses food holding equipment necessary to maintain safe and appropriate temperatures.May operate reheating equipment for small off premise receptions Secures building and other areas after eventsCreates, distributes, and maintains all records and write ups associated with the execution of catered events and catering personnel Regularly works in all lower labor grade duties when there are no functions assigned to them for service Performs related duties as required
Qualifications: Five years of experience as a banquet server with buffet and plate service, or equivalent; 1 year to have been in a lead (captain or equivalent) position.Bartending experience required.
