Location CHICAGO, ILStatus Full Time, EmployeeJob Category Food Services/Hospitality Job Description Catering Manager Overview of Position: Establish Design Cuisine as the premier caterer by generating on and off premise sales and ensuring extraordinary customer service, through comprehensive customer contact programs and highly organized event planning and execution. Provide leadership and training designed to produce and maintain high standards and superior performance and to provide a safe, efficient, professional and profitable operation. Key Accountabilities: Provide overall supervision for all exempt and non exempt catering personnel. Generate sales by identifying and developing partnerships with both internal and external corporate and community organizations designed to provide sources of revenue and high image-building event opportunities. Responsible for preparing and/or reviewing competitive bids for events. Ensure timely follow-up of all guest inquiries and delegating to the appropriate Catering Specialist(s) or Event Coordinator(s). Be constantly aware of current lifestyle and food trends. Meet with clients to develop comprehensive proposals which parallel the unique client needs. Directly responsible for organizing and executing both pre-planning and on-site supervision of front of the house operations for all major Catering Events. Responsible for ensuring and coordinating the content, quality and presentation of superior and creative menus so as to meet client expectations and budget (this may be done jointly with the Executive Chef). Establish partnerships with co-executives in catering team, Special Events, Marketing and private and corporate community leaders. Work with Human Resources office to coordinate job offers, training, coaching/counseling and team member relations issues. Responsible for training, supervision and development of Catering Event Specialist(s) and Catering Coordinator(s) in partnership with Catering Senior Event Specialist. Responsible for training, supervision and development of all Catering Event Captains in partnership with Catering Specialist(s) so they may professionally and efficiently execute events in absence of an Event Coordinator. Responsible for final completion of all performance appraisals for all Catering Department team members. Review weekly schedule for front of house and complete and/or review weekly payroll to maximize labor cost and client satisfaction. Schedule and facilitate weekly event meetings with executive chefs/sous chef and a minimum of one monthly staff meeting to addressongoing training needs, policy updates and company news. Ensure adherence of all staff to company policy and state/federal regulations regarding catering operations and liabilities including, but not limited to, alcohol consumption. Utilize all available food cost and payroll reports to ensure the achievement of monthly performance goals. Approve purchase of all front of the house inventory items based on projected business and established par levels. Establish proper receiving procedures and review all front of house invoices to ensure cost accuracy. Approve the purchase of all beverages relating to Catering. Schedule, delegate and review end of month inventories on a timely and accurate basis. Other duties as assigned by supervisor.Skills Summary: College degree/or equivalent experience Extensive previous food service/catering experience — minimum of 3 years preferred Proved track record of events sales, planning and execution Certification in sanitation and safe and food practices Exceptional communication and interactive skills Flexibility to fast-paced environment, needs, demands and changes.
