About Us:
For over 25 years Filomena has been a landmark restaurant in the heart of Historic Georgetown serving guests from all over the world including Heads of State, Politicians, Celebrities, Sports Stars and Business travelers.
Job Purpose:
Assist Executive Pastry Chef in the preparing of pastries and desserts by producing and maintaining production and high standard of quality in all presentations. Assist in managing pastry workers.
Duties:
* Accomplishes pastry services human resource objectives by assigning, scheduling, coaching, counseling assistant pastry workers.
* Assist Executive Pastry Chef in contributing information to develop strategic plans; completing plans; implementing production, productivity, quality, and customer-service standards; identifying and resolving problems.* Assist Executive Pastry Chef in financial objectives by controlling cost, waste and inventory controls.
* Assist Executive Pastry Chef in designs and dessert presentations.
* Assist Executive Pastry Chef in production of pastries, croissants, cakes, tortes, pies, tarts, developing creams, mousses, custards, fillings, icings and dessert sauces.
* Maintains safe, secure, and healthy food preparation environment by following and enforcing pastry, and dessert preparation standards and procedures; complying with sanitation and legal regulations.
* Maintains customer confidence and satisfaction by responding to their special requests.
* Maintains pastry and dessert supplies by assisting Executive Pastry Chef in purchasing ingredients; evaluating the quality of food product deliveries; maintaining inventory levels, re-order points, storage requirements, and cost-controls.
* Maintains pastry and dessert equipment by following operating instructions; instructing staff in equipment use.
*Functions and fulfills duties of Executive Pastry Chef when Executive Pastry Chef is away.Skills/Qualifications:
Ability to work in support of the kitchen team. Professional kitchen experience and knowledge of pastry and cake production required. Ability to lift up to 30 pounds regularly and up to 50 pounds occasionally. Good decision making, verbal communication skills. Good customer focus, food sanitation standards. Ability to emphasize quality excellence.
