Job Purpose:
Supports events by promoting, selling, and providing food concessions services; managing food concessions staff.
Duties:
* Accomplishes food concessions human resource objectives by recruiting, selecting, orienting, training, assigning, scheduling, coaching, counseling, and disciplining employees; communicating job expectations; planning, monitoring, appraising, and reviewing job contributions; planning and reviewing compensation actions; enforcing policies and procedures; anticipating need for additional workers; determining temporary worker requirements; engaging agencies; supervising contracted staff.
* Achieves food concessions operational objectives by contributing information and analysis to functional strategic plans and reviews; preparing and completing action plans; implementing production, productivity, quality, and customer-service standards; identifying and resolving problems; completing post event and/or function food production reports; completing audits; operating and teaching others to operate Point of Service (POS) systems; monitoring system operations; determining system improvements; implementing change.
* Meets food concessions financial objectives by estimating requirements; analyzing concession food and beverage choices to determine food, labor, and overhead costs; assigning prices to various concession choices; collecting customer revenues; controlling alcoholic beverage portions; preparing an annual budget; scheduling expenditures; analyzing variances; initiating corrective actions; ensuring the success of the concessions waste management program; maintaining cash/security controls.
* Builds and maintains food concessions sales by designing and placing pre-event advertisements; promoting concessions offerings to event attendees; evaluating customer commentary; monitoring sales fluctuations not due to event attendance fluctuations.
* Executes concessions menus by consulting with food preparation staff; selecting potential menus; evaluating past popularity of food and beverage options and availability of seasonal food ingredients; anticipating concession food and beverage consumption based on anticipated event attendance; estimating cost of ingredients; minimizing waste; placing orders with suppliers; scheduling delivery of food and beverages; receiving and checking the content of deliveries; maintaining the quality of menu ingredients and pre-prepared and pre-packaged items.
* Provides food concessions supplies by maintaining interface with sales representatives from concessions suppliers; maintaining the inventory management system; placing orders replenishing stocks of food and beverage paper and plastic containers, cleaning supplies, cooking and serving utensils.
* Keeps food concessions equipment operating by following operating instructions; troubleshooting breakdowns; maintaining supplies; performing preventive maintenance; calling for repairs; evaluating and purchasing new equipment.
* Maintains safe, secure, legal, and healthy work environment by establishing, following, and enforcing sanitation and quality of food preparation and service standards and procedures; conforming to the regulations of the alcoholic beverage commission; complying with sanitation and legal regulations of the concession food preparation areas and remote kitchens.
* Identifies current and future customer service requirements by establishing rapport with potential and actual customers and other persons in a position to understand service requirements.
* Maintains customer satisfaction by investigating and resolving complaints about food quality and/or service.
* Maintains professional and technical knowledge by attending educational workshops; reviewing professional publications; establishing personal networks; keeping abreast with food concessions industry trends; benchmarking state-of-the-art practices; participating in professional societies.
