Job DescriptionExecutive Chef (Executive Dining Room)Responsible for the successful culinary operation under the direction of the Director. Serves as the primary chef for all catered functions and events. Involved with all culinary operations including the food production of corporate dining functions. Adheres to HACCP guidelines to ensure efficient, safe and sanitary food production, preparation and presentation. Duties also include menu development, inventory, ordering/purchasing, food cost controls, training, sanitation, and personnel management to include hiring, counseling, coaching and developing. Recipe to Succeed: Supervisory, leadership, management and coaching skills Good communication skills both written and verbal Ability to communicate on various levels to include management, customers, client, and associates Proficient in menu development, cost controls, purchasing and inventory Proficient computer skills to include; various computer programs, Microsoft Office programs, e-mail and the Internet Ability to perform various motor skills such as; lifting, reaching, bending, twisting, pushing, pulling, squatting, grasping and arm-hand coordination on a continuous basis Ability to multi-task as well as stay on task and concentrate with constant interruptions Ability to get along well with others, to demonstrate flexibility and patience, to work as a member of a team Culinary creativity and menu writing abilities Exhibit courtesy, tact and reasonable speed in performance of dutiesNecessary Ingredients: B.S. Degree in Food Services Technology/Management or A.A. Degree in Culinary Arts Three (3) to five (5) years of culinary management experience in contract foodservice, fine dining setting, or restaurant with inventory and purchasing knowledge and control Good knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation Knowledge of P&L accountability and contract-managed service experience is desirable ServSafe® certified is a plus Must be able to pass criminal background and drug testGreat People.
