Executive Chef for Upscale Off-Premise Catering Company

We are looking for an exceptionally creative and talented Executive Chef to oversee the culinary operation for Food Glorious Food, the off-premise catering division of CULINAIRE.  From black tie to BBQ….intimate dinners for 40 to catered affairs for 4,000,  Food Glorious Food is the largest upscale catering company in Dallas.

 

As  Executive Chef  you will be responsible for:

 Designing, supervising, coordinating, and participating in activities of the culinary team and other kitchen personnelTeaching and training the culinary team Menu development Making presentations to clients Food purchasing Establishing and managing food and labor cost controls to insure a profitable operation Ensuring quality, consistency and creativity are at the highest level while maximizing the operation’s personnel and resources

Our ideal candidate will have:

 

Technical Requirements:Creative and innovative culinary skills  Thorough knowledge of food handling and preparation techniquesExperience in production and execution of banquets and ala carte restaurant with emphasis on qualityGood safety and sanitation habits  Current and cutting edge knowledge on new products, presentations, and technical executionStrong inventory and cost controls  Past experience developing production sheets and schedules, job duties, and timelines2 or 4 year formal culinary degree from an accredited Culinary School10 years of culinary experience with no less that 3 years as an Executive Chef or Executive Sous Chef at an upscale operation 

Leadership Requirements:Proven leadership skills to achieve goals while maintaining a high expectation of standards in regards to quality and presentationGood communication skills and ability to inspire  associates to achieve goals and advance careersAbility to build/sustain a team spirit and high moral  Participative management style, lead by exampleA guest service attitude and be able to instill that in all employees 

Managerial and Business Skills:Clear and concise written and verbal communication skillsExcellent organizational and time management skillsStrong budgetary, forecasting, and cost control skillsAbility to consistently produce profit expectationsBasic knowledge of Microsoft Word, Excel, and Outlook
